BEET SALAD

WHAT’S IN THIS CITRUS BEET SALAD:

This salad is not hard to make at all, the only negative thing is that it takes time to roast the beets, but its totally worth it. However, if you do not have the time, you can always use the canned beets.

Here’s what you will need:

  • Beets
  • Citrus fruit like grapefruit and oranges
  • lettuce
  • Vegan cheese
  • Vegan Caesar Dressing or other type of dressing.

Before we start making this salad, let’s learn about the ingredients in this recipe and just how it can effect our body from both beneficial and “things to watch out for” point of view.

THINGS TO KNOW:

  • If you are taking any medications, it may interfere with the breakdown process.
  • The grapefruit may cause tooth erosion due to the citric acid.To neutralize, you can eat it with cheese, rinse out mouth within 30 minutes and don’t suck on the citrus fruit aginst tooth.
  • Beets can cause gouts(a type of arthritis) due to high level of oxalate(causes uric acid builds up in the body).
  • The greens from beet may cause kidney stone crystal to form due to high level of oxalate.

Citrus Beet Salad (Vegan+GF)

Ingredients

  • 3 medium beets, peel and cut into chunks
  • 2 tbsp olive oil
  • 4 cup lettuce or choice of greens
  • 1 grapefruit, sectioned
  • 1 orange, sectioned
  • 1 cup vegan cheese (optional)
  • 4 tbsp vegan caesar dressing or choice of dressing
  • salt and peper

Instructions

  • Preheat oven to 400°F.
  • Peel and cut beets into small chunks. Place on lined baking sheet with olive oil, salt and pepper and bake for about 45 minutes or fork ender. Allow to cool.
  • Peel, remove the white skins and cut citrus into sections. Set aside.
  • On clean plates, arrange the cut lettuce, beets, grapefruit, orange and sprinkle with cheese if using. Drizzle vegan caesar dressing or choice of dressing on salad. Serve immediately.
