This fish taco one of my favorite go to quick dinner recipes! These delicious fish tacos are filled with fresh ingredients and delicious cod. Every bite is filled with exploding flavor and don’t skip on the super easy and delicious sauce – avocado creama!

During the week, I am always looking for ways to make a quick and healthy-ish dinner (something under 45 minutes between prepping and cleaning up) and I think this fish taco is the answer.

This dish is light, flavorful, and healthy-ish, which makes it perfect for anyone who is watching calorie intake but still want something delicious. (the reason why I say its healthy-ish, is because we are going to be using a little bit of lite mayo).

Before we get start on cooking, let’s learn about the ingredients in this dish and just how it can effect our body from both beneficial and “things to watch out for” point of view.

BENEFITS:

  • Cod is a great source for omega 3’s. This help protects your cardiovascular health, DNA production, maintaining energy levels and boosting immune systems.
  • Looking for ways to make hair more shiny or to prevent premature wrinkle from showing up? Cod is a great source of selenium, vitamin e and vitamin b which all helps in preventing these issues.
  • If you experience arthritis, you should consume more cod since it helps with reducing inflammation. As well as attacking issues like migraine and IBS. (However, gluten and dairy is one of the biggest culprit to inflammation in arthritis, so I would suggest consuming this dish in moderation or base on your reaction to it. Also, if you are allergic to gluten, then try gluten free tortilla shell.)

Things to know before cooking:

  • If you are pregnant or has a young child under six, you should only consume Cod two servings a week as that it has moderate mercury content.

Ingredients

Fish Taco

  • 4 4oz wild cod filet. (fresh or frozen.)
  • 4 gluten free tortilla
  • 1/4 tsp cumin powder
  • salt and pepper
  • 1 tbsp olive oil or olive oil spray

Cabbage Slaw

  • 3 cup coleslaw mix or shredded cabbage
  • 4 tbsp chopped cilantro
  • 2 tbsp seasoned rice vinegar
  • salt

Avocado Crema

  • 2 tbsp lite mayo
  • 1/2 avocado mashed
  • 1/4 tsp cumin powder
  • lime juice from half of lime
  • 2 dash tobasco hot sauce
  • cilantro, jalepeno (optional)

Instructions

  • Preheat oven to 400°F.

Fish Taco

  • If using frozen fish, thaw over night in the refrigerator.
  • Rinse and pat fish dry. Line a large baking sheet with parchment paper.
  • In a small dish, combine seasonings: cumin, salt and black pepper and evenly sprinkle seasoning mix over both sides of cod.
  • Lightly drizzle or spray olive oil on top offish filets. Bake for 15 minutes.

Cabbage Slaw

  • While the fish is baking, combine the cabbage slaw ingredients together in one bowl and mix well.

Avocado Crema

  • In a clean bowl, smash avocado with a fork and stir in light mayo, lime juice, and hot sauce. For smoother sauce, you can blend everything in a blender.

To Assemble

  • Lightly toast tortilla shell in oven or fold in half and toast in toaster. Place fish in tortilla, top with cabbage slaw, avocado crema and your choice of other toppings such as cilantro and Jalapeño. Serve immediately!
