Why eat plain brown rice when you can have this spiced brown rice pilaf? Although it takes a bit longer to make, but I can promise you that its totally worth it from both the flavor and health point of view. By adding the spices into this dish, it improves health conditions such as high blood pressure, dry skin, eczema and lack of energy. HOW TO MAKE THIS SPICED BROWN RICE PILAF?

  • Start by preheating oven to 350 degrees.
  • Toast coriander seeds and mustard seeds in an oven safe sauce pan and toast until fragrant.
  • Crush the seeds to release the oil and fragrant with the back of a spoon.
  • Stir in olive oil, brown rice, salt and pepper and mix well.
  • Pour in water or vegetable stock and bring to a light simmer. Cover and bake in oven for 45 minutes.
  • Remove from oven and let it rest for about 15minutes and fluff with fork and serve warm with your choice of main dish.

THINGS TO KNOW BEFORE COOKING:
  • If you are prone to feel bloated or constipation, you may want to reduce the intake of  brown rice. Although high in fiber, however if eaten too often, it can irritate the digestive tract.
  • If you are pregnant or breastfeeding. Coriander should only be consumed in limited amount during this time.  
  • If you already have low blood sugar, you should not consume this dish often as that coriander can lower your blood sugar even more.

Materials

  • 1 tsp coriander seeds
  • 1 tso mustard seeds
  • 1 cup brown rice, washed and drained
  • 2 tbsp olive oil
  • Parsley, to garnish (optional)
  • salt and pepper (to taste)
  • cup water

Instructions

  • Preheat oven to 350°F.
  • Place coriander and mustard seeds in a medium sized oven proof sauce pan. Toast over low heat for about 5 minute or until fragrant. Use a spoon and crush coriander seeds.
  • Stir in the olive oil, rice, salt and pepper.Mix thoroughly and cook for about 5 minutes.  
  • Stir in the water and bring to simmer. Cover and transfer to preheated oven and bake for 45 minutes.
  • Remove from oven and let it rest for about 15minutes and fluff with fork and serve warm with your choice of main dish.

Notes

  • If the rice came out too wet, one quick way to fix it is to drain the rice through a colander, spread the rice out on a lined sheet pan and bake until desired consistency. (it can be anywhere from 15 minutes to 30 minutes. Check and stir often!)
