Materials

Marinade

  • 1/2 cup olive oil
  • 1 each lemon juice from lemon
  • 1/4 tsp dried or fresh rosemary
  • 1/4 tsp dried thyme or fresh thyme
  • 2 tsp garlic powder
  • salt and pepper

Chicken and Vegetables

  • 4 chicken breast, cut into chunks
  • 1 bell pepper, cut into chunks
  • 1/2 yellow or red onion, cut into chunks

Instructions

Marinate

  • Combine all of the ingredients together and whisk.

Chicken and Vegetables

  • Cut all of the chicken and vegetables into chunks.
  • Combine with marinade and set to rest for 30 minutes to 1 hour.
  • If using wooden skewer, pre soak them for a few hours. Skew the chicken and vegetables.
  • Preheat grill to about 400°F and grill for about 8 minutes on each side before rotating.
  • Serve hot with tzatziki sauce and spiced brown rice.
