Citrus Beet Salad (Vegan+GF)

The citrus and beets are the main stars in this colorful, sweet, tart and cheesy salad.

  • 3 medium beets, peel and cut into chunks
  • 2 tbsp olive oil
  • 4 cup lettuce or choice of greens
  • 1 grapefruit, sectioned
  • 1 orange, sectioned
  • 1 cup vegan cheese (optional)
  • 4 tbsp vegan caesar dressing or choice of dressing
  • salt and peper


  • Preheat oven to 400°F.
  • Peel and cut beets into small chunks. Place on lined baking sheet with olive oil, salt and pepper and bake for about 45 minutes or fork ender. Allow to cool.
  • Peel, remove the white skins and cut citrus into sections. Set aside.
  • On clean plates, arrange the cut lettuce, beets, grapefruit, orange and sprinkle with cheese if using. Drizzle vegan caesar dressing or choice of dressing on salad. Serve immediately.
